NUTR 311B Nutrient Metabolism Part II

This is the continuation of NUTR 311A, an in-depth consideration of the metabolic role of nutrients throughout the human life-cycle. The physiology and biochemistry of nutrients will be examined in terms of nutrient structure and function. Food sources of nutrients, nutrient requirements and standards will be studied along with the complete cycle of nutrient ingestion, absorption, metabolism, and excretion. Content will focus on micronutrient metabolism, gene-nutrient interactions, and contemporary topics in nutrient metabolism. Integration of previous material from chemistry and physiology is essential. This course consists of lecture, case studies, and discussions.
